Dalmore is a brand of Single Malt Whisky from the Highlands, Scotland. The distillery is located in Ardross, near the River Alness. Its name means "the great pasture" in Gaelic.

The Dalmore story

Dalmore's origins date back to 1263, when Colin de Kintail, chief of Clan Mackenzie, saved King Alexander III from a brutal stag charge during a hunting party. As a reward, the King granted Clan Mackenzie the right to use the 12-pointed royal stag's head emblem on their armoury.

Six centuries later, in 1839, founder Alexander Matheson laid the foundation stone for Dalmore. Descendants of the Mackenzie clan bought the distillery in 1867. They affixed the famous stag's head emblem. During the First World War, the distillery was requisitioned by the Navy to manufacture weapons. Production was halted, but resumed in 1922.

In 1956, Dalmore acquired its own malting plant, using the Saladin process. The Mackenzie family was in charge until 1960. They then sold the distillery to their main customers, owners of the Whyte and Mackay blend brand.

In 1966, the distillery acquired two additional pairs of stills. This doubled capacity from 4 to 8 stills.

Dalmore production

The grain is all sourced from the Black Isle peninsula, just across the road from the distillery. They are brewed in 10-ton vats, with water drawn from Loch Morie. Fermentation follows in one of 8 Oregon pine vats, each with a capacity of 60,000 liters.

Dalmore boasts the oldest stills in the region, one of which has been in operation since 1874! Its eight stills are of different capacities, producing different spirits which are blended before ageing.

This task has fallen to a star of the whisky world, master distiller Richard "the nose" Paterson, since 1970.

The seafront winery is overflowing with thousands of bourbon casks, and especially sherry casks from the finest Andalusian bodegas. The distillery has built up an exclusive relationship with González Byass, from whom it sources rare Oloroso Matusalem and 30-year-old Apostoles casks, as well as Amoroso barrels.

The range includes the "classics" 12 yo, 15 yo, Cigar Malt Reserve, 18 yo, as well as King Alexander III, the first Single Malt matured in six different casks. There's also the Rivers Collection, and a number of vintages, such as the Dalmore 2009 Vintage Sherry Finish, as well as some very rare older bottles. Read less
