Santa Maria

Santa Maria refers to the white lily that blooms in spring, a symbol of the Virgin Mary. TheIe-Jima distillery is located on the island of the same name, in the westernOkinawa region.

Based on a bio-ethanol production unit, the distillery faces a number of technical challenges. The island is tiny, so local sugar cane and, above all, the quantities of water available are limited.

Since 2011, after 3 years of research and with the desire to produce a local eau-de-vie, two young natives of the island have been distilling an agricultural rum fermented from 100% local sugar cane. Read less
