Like all the other whiskies in the range, Bellevoye Blanc Finition Sauternes is produced entirely in France.
This unpeated triple malt is a blend of 3 whiskies. Each one comes from a different French distillery, and is aged for between 3 and 8 years before converging on the Charente in the cellars of Les Bienheureux.
After blending, Bellevoye Blanc is aged for 6 months in barrels previously used for Sauternes.
Tasting notes from Thomas
The nose is rather shy and sweet. Dried fruits (almonds in particular) are lightly caramelized and come with a touch of sulfur. Spices then take off, with clove and ginger, though they eventually subside. Gradually we discover nougat, green almonds, cooked apricots and vanilla. So it's a case of gourmandise taking over.
The palate is quite soft, with a moderate emancipation of flavors. Apricots and almonds are once again present, bathed in a bath of refined sugar. Gradually, they are joined by spices (cinnamon, ginger). However, a honeyed patina maintains a certain roundness within this tasting.
The finish is fairly short, with dried fruit, honey and hazelnuts. The sweetness returns with a hint of ginger. A touch of stevia appears at the very end.
