A ripe banana is combined here with AOC rum and organic fair-trade cane sugar to create this arrangé des 7 mers from Bigallet, with accents of melting, lightly caramelized banana flambé.
Nico's tasting notes
The nose is fresh and more oriented towards fresh bananas than those that have macerated for months in the bottle. The freshness of the rhum agricole sends these aromas into the air and gives them a light edge, reinforcing this idea of an almost green, still vegetal banana. It could also be a banana in the form of a candy or tangy aroma.
The palate is very soft and sweet, the rum really very round and smooth. The banana is flambéed and spiced with star anise, pepper and vanilla. The banana has disintegrated a little in the pan, and since we're gourmets, we lick this caramelized purée.
