Very old rum, Dos Maderas PX 5+3 ("two woods" in Spanish) is the product of a double ageing process.
The origin of this very elaborate brandy: rum from Barbados and rum from Guyana. It is therefore a traditional English rum.
These rums are aged for 5 years in their country of origin, in the tropical climate of the Caribbean. Then it's off to Andalusia to the historic bottler Williams & Humbert for the blending and 1 additional maturation: 3 years in Palo Cortado "Dos Cortados" casks, a rare variety of sherry.
This is a drier rum than Dos Maderas 5+5, to be used more as a cocktail.
Nico's tasting note
The nose is rather charming and jammy. The cooked sugar coats the glass and spreads out ripe, fleshy fruit aromas. The wood is soft, touched by spices and honey, to build a balanced and pleasant profile. The rest allows a nice beeswax to come to the fore, which brings a mellow and candied side. Later on, cocoa, tobacco and a little coconut milk appear.
On the palate, the rum is as seductive as ever, with a soft, full-bodied character. The white wood spreads out in greediness, unfolding its vanilla, tobacco and caramel. Some dried apricots mingle with the wood fibres, helping the rum to melt into a delightful ripe fruit reduction.
The finish prolongs the pleasure with a slightly salty liquorice that quietly fades away.
