A very old rum, Dos Maderas PX 5+3 ("two woods" in Spanish) is the product of double aging.
This highly elaborate eau-de-vie is made with rum from Barbados and rum from Guyana. In other words, it's a traditional English rum.
These rums are aged for 5 years in their country of origin, in the tropical climate of the Caribbean. Then it's off to Andalusia, to the land of historic bottler Williams & Humbert, for blending and 1 additional maturation: 3 years in Palo Cortado "Dos Cortados" casks, a rare variety of sherry.
This rum is drier than Dos Maderas 5+5, and is best used in cocktails.
Nico's tasting notes
The nose is rather charming and jammy. Baked sugar coats the glass and spreads out ripe, fleshy fruit aromas. The wood is tender, touched by spices and honey, to build a balanced, pleasing profile. After a rest, the beeswax comes to the fore, lending a mellow, candied quality. Cocoa, tobacco and a hint of coconut milk follow.
On the palate, the rum is as seductive as ever, with a gently full-bodied character. The white wood spreads out greedily, unfurling vanilla, tobacco and caramel. A few dried apricots mingle with the wood fibers, helping the rum to melt into a delightful ripe-fruit reduction.
The finish prolongs the pleasure with a slightly salty licorice that quietly fades away.
