Ferroni Brut de Fût Jamaïque 2016 is a molasses rum distilled in the heart of Jamaica, in the parish of Saint Catherine. The superb double-twisted pot still at the Worthy Park distillery is the source, and it was at the distillery that it underwent its first 4 years of aging in bourbon barrels.
The rum was then transferred to the Maison Ferroni cellars in Provence for a further year's maturation in rye whisky barrels.
Nico's tasting notes
On the nose, it's always a pleasure to rediscover that typically Jamaican banana cake dough, wrapped in an American oak leaf still well soaked in whisky. The balance is perfect at this moment, and you just want to bite into it.
Aeration doesn't detract from the irresistible sweetness of this rum - quite the contrary, in fact, as a nice ladleful of milk chocolate is added, along with pine sap and cherry pits.
The palate doesn't disappoint, as it adds a delightful, coppery power to our gourmet picture that warmly slices through our pastry. The cherry pits explode their resinous core, revealing nuances of charred nuts and a cleaner, brighter texture.
The finish, too, is dominated by stone and bitter almond, for a rich, complex banana bread.
