Ferroni La Dame Jeanne 7 Panama is a curiosity, since white rums from Panama are extremely rare. This molasses rum was distilled in a stainless steel column, and was originally intended to be aged to enhance blends of lighter rums. Guillaume Ferroni was able to take a small amount of this rum before putting it into casks, and gave it a rest in Dame Jeanne. This allowed the rum to smooth out gently, sublimating its molasses and licorice aromas.

Nico's tasting notes

The deep nose takes us in the direction of long-fermented molasses. As we cross the boundaries of great aroma, olives and overripe fruits come to the fore. Yet the impression remains of a fresh, herbaceous cane juice that both surprises and seduces.

Aeration unleashes even more power, and the rum definitely goes wild. Green olive brine catches the nostrils, then introduces pepper, black fruit tannins and fermented cane juice, the aromatic power is incredible.

In the mouth, the rum invades the palate without giving it a chance. Its wild profile is a little impressive at first, as its almost salty notes jostle the taste buds a little. But it's the savory side of the rum that catches the eye mid-palate and totally wins you over, especially as its texture becomes increasingly fatty and enveloping.

The finish is long, leaving us to contemplate a lovely pepper with resinous accents.
