Apollonie is a rum made from pure cane juice from Réunion , created in homage to Apollonie Isautier, wife of Louis Isautier, co-founder of the distillery in 1845.
This blend is a combination of agricultural rums aged 10 and 15 years . The aging process takes place in fine-grained French oak cognac casks , rigorously selected to allow for a delicate extraction of tannins, which gradually integrate into the rum.
This edition, selected by La Maison du Whisky, is offered in limited quantities of 1,531 bottles for France.
