For its collection, the bottler L'Esprit has selected this molasses rum from El Salvador .
Distilled in a column in 2012, this rum began its aging process for 8 years in the tropics, before finishing it in a continental climate for two additional years.
It was in 2021 that the ex-bourbon oak barrel #MDH 2013-2 arrived in our latitudes in which it will finish its maturation after having started it in an American oak barrel.
Bottling produced 264 numbered bottles of this brut de fût rum.
Jérémie's tasting notes
On the nose:
A profile marked by herbaceous and medicinal notes, accompanied by floral and citrus nuances. Touches of milk and black pepper add complexity. Honey and caramel reveal themselves more discreetly in the background. The whole is carried by a green freshness with menthol accents.
In the mouth:
The attack is direct and rounded, with a delicate brown sugar character. This gradually evolves towards more cooked, caramelized, and vanilla notes, supported by clove, cinnamon, and a hint of pepper. Citrus fruits then emerge, dominated by lemon, before shifting towards candied orange and cocoa, evoking a blend of marmalade and mocha. The caramel softens, giving way to slightly herbaceous sugarcane notes, enriched with cardamom and ginger. On the finish, a certain minerality intensifies.
The final:
Quite lively, it opens with a delicate acidity of lemon, accompanied by spices that gently stimulate the palate. The roasted notes remain, but are more subtle. With time, the lemon persists, becoming candied.
