Neisson Profil 105 Bio is a wood-aged agricultural rum. It comes from one of the last two independent, family-run distilleries in Martinique. Neisson is undoubtedly one of the most prestigious AOC Martinique distilleries.
This cuvée has been aged in barrels with the same toasting profile as Neisson profil 105, the only difference being that the aged rum is an organic white rum.
The aim of these cuvées is to highlight the different toasting profiles and aromatic notes that will define the Neisson style in the years to come. Their aim is also to create a stock of barrels enabling Neisson rum to be aged in old Neisson rum barrels (and organic ones at that!).
Nico's tasting notes
The nose is led by a soft woodiness that unmistakably evokes butterscotch. One might think of a kind of fatty nut spread, washed away by elegant cane juice with accents of lime peel.
With aeration, we come closer to pure white rum, beautifully tinged with citrus and rich with cane fiber that's both sweet and impeccably long-lasting. Resting allows us to return to more woody notes, which skilfully lend a patina to our rhum agricole.
The palate offers a fine, subtle attack, with a rum that seems to gather momentum before sending off its fireworks of caramelized wood. The fresh cane, tinged with citrus zest, is the first to penetrate, then lights up the palate with its sun-drenched juice, before coating it with mellow flavors of tender oak, butterscotch and coconut.
The finish returns to finely peppery, savory cane juice.

I had read good reviews about this rum and its superiority compared to the classic Profil 105... I haven't tasted the latter yet but I loved this organic Profil 105 for its richness and complexity with finesse.
