Novo Fogo Barrel Aged is a cachaça, a Brazilian brandy produced by fermenting pure sugarcane juice, just like agricultural rum, but to precise specifications.
The distillery is located in Pico do Marumbi, at the foot of the Serra do Mar mountain range. Sugar cane is grown in particularly fertile soil in the heart of the rainforest.
The canes are harvested by hand and pressed within hours of cutting. After an 18-hour fermentation with wild yeasts, the juice is distilled in a copper still. It is then aged for 2 to 3 years in a tropical climate, in 200-liter ex-bourbon American oak casks. These are second-hand barrels that have been disassembled, sanded and re-toasted.
This certified organic cachaça is bottled without cold filtration.
Nico's tasting notes
The nose opens with a little candied cane, a raw sugar toffee with light accents of cooked vesou. The green side of the cane gradually begins to stretch out under the nose, giving off a certain vegetal freshness.
Aeration exposes the woodiness, revealing raw white oak with a full patina of round, slightly reduced cane juice. The alchemy between the two results in a flurry of sweet, slightly vegetal spices.
The palate is fresh and lively, with a few gourmet spices that immediately jump out at the taste buds. They dance around a fresh, natural cane, with its juices and flesh very lightly patinated and candied.
On the finish, a little butterscotch nestles on the palate, with flavors of cane sugar and a hint of licorice.
