Novo Fogo Barrel Aged is a cachaça, a Brazilian brandy made by fermenting pure sugar cane juice, just like agricultural rum, but with a precise specification.
The distillery is located in Pico do Marumbi, at the foot of the Serra do Mar mountain range. The sugar cane is grown in the middle of the rainforest on particularly fertile soil.
The canes are harvested by hand and pressed within hours of being cut. After an 18-hour fermentation with wild yeasts, the juice is distilled in a copper still. Then it is aged for 2 to 3 years in a tropical climate, in 200-litre ex-bourbon American oak barrels. These are second-hand barrels that have been disassembled, sanded and re-toasted.
This certified organic cachaça is bottled without cold filtration.
Nico's tasting note
The nose opens with a little candied cane candy, a raw sugar toffee with light accents of cooked vesou. The green side of the cane starts to stretch gradually under the nose, and gives off some vegetal freshness.
Aeration exposes the woodiness and reveals a raw white oak, fully patinated by a round and slightly reduced cane juice. The alchemy operates between the two, and results in a flurry of sweet spices with a slightly vegetal character.
The palate is fresh and lively, with some gourmet spices that immediately jump to the taste buds. They dance around a fresh, natural cane, with a very slightly patinated and candied juice and flesh.
On the finish, a little butterscotch comes to nestle on the palate, with flavors of cane sugar and a little touch of licorice.
