Oliver's Exquisito 1995 is a rum from the Dominican Republic, produced by Oliver & Oliver. This Cuban family is faithful to its original tradition, offering fine blends of light rums. They are also heirs to a certain Spanish tradition that favors smooth, rounded rums.
This cuvée was aged in American oak barrels, using the solera method. The oldest rums in the blend were distilled in 1995, for bottling in 2018. Only 1,500 bottles were produced.
Nico's tasting notes
The nose opens with a rich, gourmand oak barrel. Roasted aromas are rounded out by vanilla and blond caramel, and sweet spices are set against a light red fruit syrup.
Aeration brings out concentrated notes of roasted and caramelized nuts. The American oak barrel is toasted to perfection, allowing it to develop typical vanilla and coconut aromas.
On the palate, the attack is round but well-balanced. The surprise comes from the fruity aromas we had only encountered furtively on the nose. A few red berries dance on the taste buds at first. They leap into a velvety, sweet-spiced cane syrup, which soon invokes more woody, caramelized aromas.
The finish tightens with a savory pepperiness and hints of roast.
