This 2021 vintage of Pastis Château Des Creissauds is a truly artisanal pastis created by Guillaume Ferroni and his team. The vintage pastis they produce each year, in Aubagne, is marked by the natural variations of the terroir.
Grown on the Domaine des Creissauds, fresh plants are harvested by hand between May and September, then macerated for several weeks in super-fine alcohol. The macerations are then blended, and aged in oak casks for 6 to 10 months.
Bottling is done by hand by Maison Ferroni.
Nico's tasting notes
On the nose , the aromas explode, burst and pour out in a torrent that rushes under the nostrils. The richness of anise, the warmth of licorice and the multitude of vegetal and resinous nuances, everything is there to give us a radiant smile.
Aeration reveals a more resinous and spicy character, more catchy, less rounded. The pastis now gives way to freshness, it becomes striking and intense.
On the palate , the concentration of aromas is to match, but the ease of tasting is what will surprise us the most. All this is very round and above all very balanced, as fresh as it is delicious, as intense as it is soft, as spicy as it is vegetal. A little minty freshness hovers over the palate and soothes the few more strongly spicy incursions, so the balance is there at all times.
The finish is round and very long, very tasty and as easy as ever, with a small seed of caraway that seems to stay in our teeth.
