Pastis de Fleurs Château Des Creissauds 2021 is made with fresh flowers hand-picked in the villages of France. Located in Aubagne, Provence, this château is the production site for many of the spirits bottled by Maison Ferroni.
Plants harvested by itinerant distiller Élodie Hodin include elderflower, lime blossom, sage, immortelle, lavender, rose, meadowsweet, jasmine, lilac and honeysuckle. The plants are macerated immediately after picking to preserve all their aromas.
Unique in its composition, this cuvée is a limited edition for summer 2021.
Nico's tasting notes
The nose is extremely aromatic and concentrated, so much so that one imagines a spirit as sticky as sap. It's precisely these vegetal, medicinal aromas that emerge, with plenty of freshness and a minty, even camphoraceous edge.
Aeration brings us back to the essentials, namely the highly concentrated licorice that dominates the whole, as well as aniseed notes ranging from the freshness of fennel to the intensity of caraway.
The palate is surprisingly sweet and delicious, for while we might have expected an intensely medicinal freshness, we discover a totally melted, very sweet licorice. It's soon accompanied by a great armful of plants and seeds, each more tasty and natural than the last.
The finish is very long, with the oils of the most powerful plants swirling tirelessly around the palate, becoming increasingly refreshing.
