Privateer New England Reserve is a molasses rum produced in the United States, more specifically in Ipswich, Massachusetts. It is a blend of rums aged from 2 to 6 years.
It is made from molasses from Guatemala. Once the molasses has been fermented with specially selected yeasts, the mash is distilled twice. First in a pot still, then in a column to adjust the type of rum desired.
The rums are then aged in different types of casks. The Privateer distillery uses new American oak casks, as well as ex-brandy, ex-bourbon and ex-rum casks (Privateer of course).
The rum is reduced to 55° before casking then reduced to 45° once the barrels are assembled.
The work of the cellar master is precise and interesting because he has several levers to add complexity to this rum.
This cuvée, New England Reserve, is bottled without additives and without cold filtration.
