The freshly pressed cane juice is fermented. Reimonenq then distills it to produce a white rum called " coeur de chauffe " from which the "heads" and "tails" of the distillate have been removed. The rum is then aged in oak barrels for 4 years, during which time it acquires its color as well as its woody and spicy aromas.
It can be drunk neat as a tasting rum, or as a "ti vieux" with a little lime and brown sugar crushed with a teaspoon at the bottom of the glass.

The nose opens with a rather complex rhum agricole, born of fresh cane and dried fruit. It's covered with a sticky varnish, passed over precious woody notes that are still a little green. A few spices delicately stir the nostrils.
With aeration, the profile oscillates between the ease of a rather candy rum (sweet, sparkling fruit juices) and the gentle elegance of a rum that is already quite mature. It's the still-young oak that contributes to this, alternately distributing fresh aromas of herbs or accents of dried fruit.
The palate is woody and nourished by fatty nuts, in the typical, irresistible style of the house. Dried fruits (apricot and prune) intertwine perfectly in this gourmet paste scented with vanilla and almond. The richness of peanuts can even be felt in this woody, full-bodied thickness.
The finish is long, pastry-like, with cherry pits and mellow, peppery oak tannins.
