This rum is the result of a meeting between Stéphane L'Éveillé, a native of Mauritius, and the Saint Aubin distillery, which produces top-quality rums made from pure cane juice.
For the unaged version of Rivière des Créoles, the cane used is R-579. It was fermented for 3 days before distillation, partly in columns and partly in pot stills. The pure cane juice rum then rested for almost 3 years in vats before a slow reduction...
Only 504 bottles of this craft rum were produced.
Stéphane's tasting notes
The organic, fresh cane character is apparent right from the nose. Vegetal notes are omnipresent, accompanied by menthol. Small peppery and spicy notes also appear with aeration.
On the palate, the power of the 59.2 degrees is fully assumed and enveloped by the sweetness of the cane and the presence of the herbaceous side.

Nico's tasting notes
The nose is inhabited by extremely ripe and sweet cane, which seems to swell in the glass. We are navigating here in the heart of the territory of carefully distilled eaux-de-vie, with vegetal notes that are as precise as they are delicious.
Aeration introduces a little more freshness, with lemon juice, other sweet citrus fruits, and some black and red berries with bright seeds. A little herbaceous and minty breath confirms this, for a remarkable balance.
The palate immediately shows a coppery signature, typical of a traditional distillation, with some stones with almost mineral accents. The rod briefly abandons its roundness for a straight and clean feeling. It displays a herbaceous variety, made of aromatics, greenery and freshness.
The finish focuses on a peppery and vegetal bagasse, reminiscent of a marc eau-de-vie.
