Rum Mocambo 15 ans is a molasses rum produced in Mexico by Licores Veracruz. This distillery, which has been in operation since the middle of the 20th century, has only been exporting its products for a few years. Its cellars contain stocks of very old rums like this one.
This is a single cask of American oak that has contained bourbon. All 360 bottles are hand-numbered.
Nico's tasting notes
The nose combines well-rounded, highly concentrated caramel with tight, sweet coffee. This rum clearly evokes the molasses from which it is made, and illustrates all the darkness of the cask from which it comes. In the depths, there's a fruity eau-de-vie that goes gourmet with banana syrup.
The aeration takes the caramel even further, with ever greater density and concentration. We've added butter and cream to this caramel, but we've cooked it all the same, until it's completely black.
The palate is very light and fluid, which is surprising given the profile encountered on the nose. The caramel and coffee are tinged with fruity nuances, like dark chocolate with raisins. The midpalate flavors are also less roasted than we might have expected, calling instead for sweet spices.
The finish is gently occupied by a light vanilla that settles quietly on the palate.
