Sampan blanc 54° is a rum made from pure cane juice from Vietnam. The Indochina distillery uses farmers from the Quang Nam province, who do not use any chemicals. The hand-cut cane arrives at the distillery during the day, then it is quickly pressed to obtain a very fresh juice, ready to ferment.
At the end of this stage, the pure fermented juice is run through a French copper column still. For this overproof edition, it is less reduced than usual. However, great care is still taken at this stage, with more than a year between distillation and bottling (August 2019 - September 2020 for this batch 2).
Nico's tasting notes
The nose is full-bodied and expressive, leaving no doubt as to the rum's artisanal origin. Yet there are no overly wild or organic notes. No, it's the cane and the cane alone that dominates, with a frank, full and clear profile.
Aeration adds a little more character, with a rather serious but aromatic pepper. Citrus fruits are also present, in the form of a fruity, sweet juice. Finally, a surprising note appears, somewhere between Asian sauce and overripe exotic fruit.
The palate is soft and round, with a melting cane that rolls all the way down the palate, before bursting with more freshness and light. Its vegetal, fermented character spreads across the tongue, leading to notes of steamed vegetables with pepper.
The finish returns to ripe, natural, tender cane.
