Santisima Trinidad De Cuba 7 Ans is a light molasses rum in the Cuban tradition. The house's maestros roneros are first and foremost masters ofblending. The cane eaux-de-vie used in the blend are all aged separately for 2 years. This is followed by a series of blends with older rums, giving an average of 7 years for the final blend. This double aging ensures a very delicate, complex and smooth profile.
Nico's tasting notes
The nose gently settles on ripe, velvety summer fruits. Sticky mirabelle plums, apricots and white grapes light up the rum with their sweet juice. These fruits then become more cooked and roasted, like peaches cooked with sweet spices.
Aeration reveals a slightly more tropical, exotic heart of rum, with ripe exotic fruits that remain on the reserve. Resting finally takes us to a mellow marshmallow, with slightly acid accents.
The palate is a singular mix of tart and wild flavors, between fruit syrup and tanned leather. That's the impression you get on the attack, and it's quickly taken over by a very light rum, passed through a heavily toasted barrel.
The finish is rather round, and a few touches of molasses creep in. Spices and alcohol swarm through the finish.
