This Poire conférence & Fèves de cacao torréfiées arranged rum is made by Belgian artisan So'Rhumantic. It is a limited edition for winter (harvest 2022).

This recipe is made from a combination of white agricultural rum from Guadeloupe and organic cane sugar syrup.

The conference pears are Belgian and the "Criollo" cocoa beans are from Madagascar. This blend of flavors gives pride of place to the fruity, fine, sweet juice of the pear, and the fatty, unctuous indulgence of the cocoa.
This combination is resolutely gourmet. It transports you to a kitchen where you'll find a chocolate pear cake just out of the oven.

Nico's tasting notes

The nose of this rhum arrangé is dense and sweet at the same time, with a character that plays on sugar and acidity, a little like a pineau or pommeau. The cocoa adds a great deal of depth and thickness, as well as a very warm, humid, tropical quality.

On the palate, delicate fruits take advantage of the rum's roundness to wander across the taste buds with ease. Roasted cocoa enters the scene in the middle of the palate, adding a gourmet touch. Its grain joins that of pear in a highly original profile.
