Licorera Cihuatan takes its name from the valley and archaeological site of the same name in El Salvador. Located in El Paisnal, it is the country's first and only distillery. It was created in 2004 within a sugar factory, Ingenio La Cabaña, which had been in operation for a century. It is therefore self-sufficient in sugar cane, from which it distills syrup and molasses. The factory also generates its own electricity by burning its bagasse.

After fermentation in vats, the musts are distilled in two ways. On the one hand, a multi-column installation produces a very light rum. On the other, a small steel and copper column distills a 75% alcohol aguardiente. The two distillates are blended, Cuban-style.

Gabriela Ayla, master distiller and cellar master, has two ageing sites. The casks are arranged in solera. These are mostly old bourbon casks, but can sometimes be made of new oak, or even ceiba maya, a local variety of cheese tree.

Cihuatan bottlings are inspired by Mayan culture and legends. Each cuvée is a reference to a divinity, like the goddess Itzpapalotl for Cihuatan Obsidiana, or the god Tlaloc for Cihuatan 8-Year-Old Indigo. Read less
