Cihuatan 8 ans Indigo is a molasses rum from El Salvador, adorned with an illustration of the god Tlaloc, deity of rain. It is colored indigo blue, a reminder of the Mayan mastery of dyeing acquired through contact with this local plant. It was these same Mayans who named the place where the distillery that makes this rum nestles, the Cihuatan Valley.
This rum was distilled in columns, then placed in American oak barrels containing bourbon. These barrels, the youngest of which are 8 years old, were then blended to create this cuvée.
Nico's tasting notes
On the nose, the approach is fairly light, with a light, toasty woodiness, like nougat encrusted with a few nuts. Small splashes of citrus add a little freshness, along with a hint of bitterness, for a relatively taut profile.
With aeration, the roasting notes become more pronounced, and the toasted wood shows a little more character. It then begins to melt gently, leading to notes of vanilla caramel.
On the palate, sweet citrus fruits are the first flavors to take hold of the taste buds, with the roundness of cooked, caramelized cane sugar. Roasting then takes over, supported by fine, slightly piquant spices. These spices become sweeter and more vanilla-like as the toasted wood turns to toasted nuts.
The finish is sweet and vanilla-like, with a lingering orange liqueur.
