This white rum from the young Ampov distillery comes from Cabmbodia. It is the first rum made from pure Cambodian cane juice.
The sugar cane harvest is done a maximum of 30 minutes from Phnom Penh. The distillery staff press then ferment the cane juice for 4 to 5 days.
The cane wine then undergoes distillation in a copper pot still.
When it comes out of this still, the eau-de-vie is around 72° alcohol. A slow reduction to 42° is then carried out before bottling.
