Nico's tasting notes
The nose opens with a soft, round, mellow cane, adorned with a layer of blond tobacco, vanilla and caramel. It still carries the aromas of its fresh juice, spiked with sweet pepper and citrus zest.
Aeration begins to cook our cane juice, which turns into a sweet honey with vegetal nuances. The vesou gradually becomes raw sugar, one of those fatty unrefined sugars with hints of vanilla and caramel.
The palate first returns to basics, with a savory cane juice bursting with sugar, herbaceous notes and lime zest. This is followed by a lovely roundness that gradually coats the palate, with vanilla, sweet almonds, sage and a very savory side, with lots of umami.
The finish reminds us of cane sugar, quite simply, and always greedily.
"A very gourmand young rum, tender and flavorful, where the cane juice is just cooked..."
Stéphane Ti'verre
On the nose 👃🏻: the cane is straightforward, lively, pastry-like and slightly vegetal at the same time. The young woodiness is subtly expressed, as I like in amber rums. There's vanilla, a little pepper, and a lovely fruitiness that oscillates between grape, apple and even pineapple. The oak adds just the right amount of sweetness, with a certain freshness and a touch of nuts on aeration.
On the palate 👅: this is a very smooth and approachable rum surprisingly, one would give it 3 to 5 degrees less. The palate entry is unctuous, vanilla and almost buttery, very much focused on that fresh cane that I find elegant. It's only then that the nutmeg and pepper spices come to the fore, still with a sweet roundness throughout, but without excess. Subsequent sips bring a few peanut notes to complete the picture.
The finish is rather long. The peppery cane lingers quite well on the palate and the young oak takes us on to liquorice, with a little pear in the background 👌
Verdict ⚡️: once again with this one, I'm a big fan of amber rums 🥰 They're both beautifully fresh with the cane expressing itself effortlessly, and the oak adds just the right amount of complexity and deliciousness without ever taking over 👌 Baie des Trésors doesn't try to give the illusion of an aged rum, it's a beautiful amber assumed as such.
