Bayou Distillery is one of the largest rum distilleries in the United States. Located in the southern state of Louisiana, it lies in the heart of a subtropical region. This hot, humid environment is ideal for growing sugarcane.

Cane has been grown here since 1751, and since then it has always been an abundant source of sugar, and therefore molasses. However, the Civil War saw the entire distillery destroyed in the late 19th century. Since then, no rum production units have been rebuilt. It's the recent craze for craft distilleries that has made rum distillation in the region a matter of course once again.

Bayou distillery was created in 2011. It produces rum using a recipe based on unrefined sugar and molasses, known as "sugar house". This preparation is fermented and then distilled in pot-stills bearing the sweet names Ruby, Uma and Marilyn.

Aging takes place in old bourbon barrels from the Buffalo Trace distillery, using the solera method.

A white and an aged rum, as well as a spiced, form the basic range of Bayou rums. Read less
