Bayou XO Mardi Gras is a tribute to Cajun culture and the celebration of the beginning of Lent. This is a very important tradition in Louisiana, where this rum originated. The Bayou distillery is one of the largest in the United States, working exclusively with local molasses and distilling its rums into small cuvées and pot-stills.
This rum is aged in ex-bourbon American oak barrels. Arranged according to the Solera method, the oldest barrels are 6 years old. Some of the rums in the blend have been finished in sherry casks.
He won a medal at the San Francisco World Spirits Competition in 2019.

This is my first bottle of XO bayou mardi gras.
You can quickly sense the quality of the Solera method maturation (6 years apriorie. )and finished in old sherry casks, it's a complex, fruity rum.
As a fan of Louisiana, it captures the spirit of the bayou, the cypress trees, New Orleans! ⚜️ la Louisiane sans oublier les célébrations du Mardi Gras ....
What I smell : Sweet dried fruit aromas mingle with cedar wood and tobacco on the nose.
On the palate, notes of prunes, apricots and plums, with a magnificent spicy, woody note.
