The 2021 harvest of Clairin Sajous is produced at the Chelo distillery in the north of Haiti, in the commune of Saint-Michel de l'Attalaye.

Clairin is distilled from pure "Cristalline" sugarcane juice. This rare, ancient variety is organically grown on a 30-hectare plot.
Fermentation is carried out with wild yeasts before discontinuous distillation in a pot still heated over an open fire. This artisanal production is supervised by Michel Sajous himself.

No reduction in alcohol content is carried out before bottling. It is therefore a raw distillate.

Nico's tasting notes

The nose is initially marked by a veil of solvent, which immediately shows the concentrated potential of this eau-de-vie. A few vegetal notes quickly crack the surface, releasing very fresh, herbaceous, resinous and mentholated aromas.

Aeration reveals the deep aromas of olive brine and truffle, typical of clairin. The fermentation of the cane juice is then taken a step further, making it sweet and sour and powerful.

The palate is very round and even oily, which is quite remarkable when you reach such high degrees. The flavors are herbaceous, vegetal, fresh, licorice-like, aniseed-flavored, somewhat resinous and medicinal, all gently but with a certain concentration.

The finish is spicier and especially peppery, with an olive in brine that never leaves the palate.
