Clément Private Cask Chauffe Extrême is made from an exclusive selection by cellar master Julien THIMON. This cuvée is aged in 202-liter new American oak casks.
These barrels have received a special treatment called "extreme toasting". This toasting allows the rum to penetrate deep into the wood, resulting in highly pronounced aromas.
This agricultural rum follows in the footsteps of Cuvée Alligator.
A total of 5 casks make up this cuvée. Each barrel produced around 380 bottles.
Nico's tasting notes
The nose has a fairly intense concentration that leaves a veil of solvent floating above the glass. You can already sense that the rum needs a little air to relax and begin to deliver itself.
With aeration, concentration is always the order of the day. It is at the service of an elegant, candied fruitiness, as in an aged eau-de-vie with prunes or cherries. The woodiness is roasted but balanced, avoiding notes of charcoal to focus more on nuts and vanilla.
The palate is intense and spicy, with a certain roundness that quickly soothes the taste buds. The woodiness is quite powerful, and its roasted character allows it to cling to the walls, leaving behind toasty flavors. Nuts take advantage, along with sweet spices, to form a dark chocolate encrusted with woody flavors.
The finish is roasted and gently spicy.
