In brief: sweet spices - woody - nuts - cane - dried fruit - sober
The nose is deep but reserved, with a sobriety that seems to want to retain some of its mystery. Then the rum quickly begins to breathe out some spices (cinnamon) and licorice. It seems to be pressed by its own weight, and by the sweltering ambient air. Indeed, you can feel that its layers are padded with wood, dried fruit and, of course, cane.
With a little air, it lets out more and more, revealing itself more intimately. The melted woodiness then presents itself with relatively fatty, powdery nuts, then the cane emerges from its curtain of spices. This appearance is truly delightful: the beauty has taken care of its entrance. We've arrived at a beautifully balanced, gourmet profile, with everything secretly falling into place before the performance, which is now in full swing.
On the palate, the wood has definitely come out of its reserve, catching the palate with its prominent, toasty grain. It's a savory, purposeful wood, which has managed to surround itself with just the right amount of spice and nuts, without leaving center stage. After his best turn, he lets the dried fruits have their fun for a few moments, before the beautiful, delicate cane finishes the number.
The finish is typical of an agricultural rum, woody, a little peppery and moving back and forth around a fruity cane.
