An aged rum made by blending several vintagesat least six years old, Clément Vieux XO is appreciated for the woodiness that dominates its character. The aging process is unique, as the rums spend a year in new French oak casks before being transferred to barrels formerly used for bourbon. The result is a deep aromatic intensity.
Clément rhum vieux XO was awarded a gold medal at the 2012 Concours Mondial de Bruxelles.
Nico's tasting notes
The nose of this rhum agricole is fresh and minty. It's also loaded with spices, also fresh (curry). It's complex, vegetal and decidedly fresh, like cut grass. Then a lovely woodiness enters the scene. Finely spiced, it is reminiscent of a cigar box with a hint of vanilla. This woodiness grows stronger, appearing whiter and younger. The cane becomes more powerful, accompanied by its faithful white pepper. A certain naturalness is restored with this wood and fresh cane.
On aeration, sophistication returns with licorice spiked with caraway seeds. We return to the depths of the oak barrel. The woodiness is still new, but softened by honey. Its freshness now brings to mind apple or pear.
The palate is well-balanced, with as much room for cane as for spice and wood. A certain acidity stimulates the taste buds, which seem to deliver a sweet juice where wood and vanilla merge.
The spices persist, joined in the end by past fruits that had remained discreet until then.
