The Great Whites Jamaica is a rum from La Compagnie des Indes. The aim of this new range is to showcase some of the most aromatic white rums from sometimes little-known styles and origins.
This is a 50% bottled rum from the New Yarmouth distillery. It was distilled in pot stills from molasses mixed with cane juice fermented for two to three weeks.
Nico's tasting notes
The solvent-filled nose screams "Jamaica!" on first contact. Here's a typical expression from the New Yarmouth distillery, full of glue, varnish and solvent, and yet so seductive. Indeed, behind this chemical approach, exotic fruits and red berries press and concentrate, and we can already imagine a unique experience on the palate.
Aeration and rest calm the solvent's ardor as much as possible, revealing a certain coppery aspect. This dry, metallic aspect adds a layer of complexity, inviting us to discover the next. The latter comes with time, and the most patient will discover a pastry-like character drawn by pits, herbs, flambéed exotic fruits and even cooked cane juice.
On the palate, we're quite surprised to encounter a soft, almost creamy texture, due to the rest and reduction work carried out by La Compagnie des Indes. We forget the solvent (or almost) to concentrate on exotic fruits with velvety flesh, perfumed with sweet spices, floral essences and aromatic herbs. We also appreciate the slight fermentative approach in the middle and end of the palate, which brings a hint of truffle and olive.
The finish is greedy, long and pastry-like, with rum-soaked raisins and bitter almond.
