Cubaney Exquisito 21 years old is a rum from the Dominican Republic bottled by the Oliver & Oliver distillery and aged in oak barrels, in solera (which means that the oldest rum in the blend is 21 years old).
Nico's tasting note
In short: cane - yellow fruit - vanilla - wood - delicate
The nose seems to point to an aguardiente (brandy) of pure cane juice, with a light, slightly salty olive. The yellow fruits are ripe and juicy (mirabelle plum, apricot, melon). The vanilla and the right amount of wood evoke nougat. In two words, it's well done.
With a little airing, the profile is balanced and charming. The caramel and vanilla are rolled in fruit juices. The toasted and spicy woodiness is more classic, but this imposed figure is part of a very pleasant programme.
The palate is soft and balanced, with a rather complex and delicate vanilla. No great extravagance but a feeling of a job well done, a search for simple pleasure. Despite a rather sweet impression, the spices and caramel are set against a waxed woody encaustic of the most beautiful effect.
The finish is much more toasty and roasted, with toasted oak and roasted chestnuts.
