Dillon Rhum Blanc Canne Rouge 2019 is an AOC Martinique agricultural rum. The pure cane juice comes from a single variety: red cane. This single-varietal rum, made from this particularly sweet species, was distilled in a Creole column. It then undergoes a slow, fractional reduction, giving it suppleness and, above all, a long finish.
Nico's tasting notes
The nose is as close as possible to sugarcane bark, with rather dry, peppery vegetal notes. Despite this, a feeling of roundness emerges, as the sugarcane fiber is sweet and candied.
Aeration gives us the chance to get even closer to the cane and its terroir. The fermentation of the juice comes to the fore, revealing a profile with iodine accents, with almost animal and smoky touches that blend perfectly with the pepper.
The palate is round and fatty, with a natural cane juice that really leans towards spice. It's with a certain surprise that we return to this idea, which almost touches on charcuterie. The pepper is also partly responsible for this, as it is both tasty and gourmand.
The finish is round and vegetal, with a decidedly farmy touch.
