This Mauritian rum from FAIR is made by fermenting and distilling muscovado, a highly aromatic, unrefined sugar from the Philippines or Mauritius with a high molasses content. To obtain it, sugarcane juice is heated until complete evaporation. The resulting residue is ground to produce muscovado.

In brief: fresh - marron glacé - artichoke - cane - lime - cane sugar - soft in the mouth
The nose raises a wave of intense freshness at first. Once the veil is lifted, we discover a very smooth, delicate rum with notes of marron glacé or steamed artichoke. This delicacy and mellowness do not detract from the freshness of an agricultural-style white rum and its slight lime bitterness. Still, the nose is quite powerful in this respect. The mellowness and sweeter notes appear in the hollows, sheltered from the sharp, dry air blowing through the cane straw.
On aeration, the artichoke mingles with the cabbage and sends out a few hints of fermentation, while the marron glacé looks more and more like melted cane sugar. Powerful, with floral and slightly metallic aromas.
On the palate, the entry is discreet, which is both surprising and remarkable for a rum of this grade. The heart of the rum does have an agricultural bent, with cane and citrus. Finally, the cane sugar aromas stand out for their flavor, but don't give a sensation of sweetness at all.
The finish features delicate, gourmand notes of marron glacé and tender artichoke.

A rum with a singular profile, somewhere between floral and artichoke, but the latter is discreet. I was expecting more peachy aromas. Very good, and the alcohol content is well integrated.
