Here, the Ricci Family presents a rum aged in a cave, and compares it to the same original white rum, one unaged, the other aged in the family's usual cellar.
It all starts with a white rum which is in reality a blend of two agricultural rums from the Montebello and Bielle distilleries. The initial alcohol content of the blend is then 78.6°.
Six small 50L barrels were filled with this rum. Three were aged in the family cellar, while the other three were stored in the Baume Obscure cave in Saint-Vallier-de-Thiey in the Alpes-Maritimes.
After aging for 16 months, the rum aged in the cave came out at 67.1° while that located in the cellar came out at 76.1°.
The set includes three 37.5 cl bottles. :
- The initial white bottled at 78.6°
- ESB (“raised in wood”) aged for 16 months in the cellar and bottled at 76.1°
- ESB aged for 16 months in the cave and bottled at 67.1°
