Ferroni La Dame Jeanne N°18 is a white rum whose molasses, imported from Sète, has undergone a long fermentation process (5 days) and distillation in a traditional still in Corsica.
Borrowed from the best eaux-de-vie of Eastern France, the rest in an open Dame-Jeanne allowed this rum to air out and improve.
The rums in this series are selected by Guillaume Ferroni for their rare and original aromatic notes. They are bottled to the traditional Royal Navy degree.
Nico's tasting notes
On the nose, we encounter a precise, slightly coppery spirit, whose vegetal character tends to lean towards slightly bitter herbs, pome fruits and even gin-like herbs and spices. There's also a hint of resin diluted in barely melted raw sugar.
With aeration, the coppery side takes on hints of red fruits and black berries, always between the acidity of the fruit and the slight bitterness of its seeds.
On the palate, there's a very fat, well-rounded feel, without any sugar of course, but with a well-coated texture. This quickly contrasts with another, more coppery, sharper sensation, pointing towards a concentration of black and red berries. The slightly bitter yet complex flavors of the seeds and pits are just like the other sensations: contrasting.
The finish is somewhat coppery and mineral, with flavors of resin, seeds and pits that linger long on the palate.
