Germana Classica is a traditional cachaça, made with respect for tradition. The distillery is Sergio Caetano & Sons, based in the Brazilian state of Minas Gerais. On the back of the bottle is a very short list of ingredients: fermented cane juice! No cheating: this is pure sugarcane brandy. The cane is grown without chemicals, and fermented with natural yeasts. As with many cachaças, we simply add a little corn to kick-start the fermentation process.
Distillation then takes place in a traditional iron still. Unlike most cachaças, which are rested in wooden vats, this Germana Classica is rested for 6 months in stainless steel tanks. This preserves its crystal-clear color, perfect for impeccable-looking caipirinhas.
