Tasting notes from Thomas
The nose takes us straight into a fruity, pastry-like atmosphere. Brioche and warm croissant appear first. This is followed by apricot nectar, vine peach and candied orange. Plums, almonds and a hint of walnut soon follow. With no spice and no trace of wood, this is a mouth-watering start.
Aeration puts butter, dried fruit, orange and apricot on a pedestal. Slight notes of graphite, refined sugar and dates are then discernible.
Round and full-bodied on the palate. The fruit and pastry character of the nose continues. The opening is quite sweet, with apricots, brioche and dried fruit. The second part of the palate is still buttery, with renewed fruitiness (plum, orange) and a good return of walnut, which becomes the majority.
The finish is slightly drier, with a less oily nut than before. The kumquat and sweet spices (nutmeg) then remain on the palate with a little apricot juice, refined sugar and chocolate.
