Vulcão Cabo Verde is a white rum made from pure cane juice from Cape Verde, and more specifically from the island of Santo Antão, the birthplace of grogue.
In Cape Verde, the term "grogue" refers to traditional rum.
To produce it, the distillery uses 3 varieties of endemic cane, and the spontaneous fermentation process lasts 10 days, which is very long and contributes to the richness of the aromas. After distillation in pot stills, the grogue is left to rest for a long time in large decanters.
Nico's tasting notes
The nose is striking, with wild, lively sugarcane. You think you're close to the alembic when hot metal whizzes past, revealing a cane of character. Roundly spicy, it also flirts with tender green vegetal, then licorice stick.
Aeration brings out a few touches of solvent, then we enter a serious fermentation phase, with organic aromas. Olive, mushroom and all those wild fermentation notes are present. With a little rest, sweet tomato notes return.
The palate is as intense as the nose would suggest, and to our delight. The intensity is in the aromatic power, not in the strength of the alcohol. In fact, the entry into the mouth is particularly fatty and silky, allowing us to take full advantage of all the terroir aromas that follow. The fermented cane juice offers flavors of green olive brine, rosemary, mushroom, very ripe cane and very ripe pineapple.
The finish gives way to a delicious exotic pepper.
