The 50 cl bottle is accompanied by a 10 cl bottle of the same rum taken before finishing in Pedro Ximenez. You'll be able to appreciate the precise effects on the rum of the finish with sail crossing.
Nico's tasting notes
The nose opens with a woodiness tinged with sweet spices, which quickly darkens to give us a roasted profile. From this almost mineral aspect comes a slightly metallic, coppery sensation, which in turn runs off into pits, more particularly cherry.
Aeration reveals more of the barrel, with vanilla accents of American oak. A little coconut milk concentrate coats the yellow fruit, before the red fruit tannins return to provide a sharper edge.
The palate is very coating and flavorful, with concentrated rum that takes over the entire palate in a fraction of a second. A certain sweetness is felt, accompanied by the thickness of greedy American oak. Red fruit and apricot jam then take hold on the mid-palate, with a hint of stone.
The finish returns to a toasty woodiness, which finally gives us an extra touch of vanilla.
