Junipero Californian gin is made in still jars with over 12 ingredients.
Only 30,000 bottles are produced each year, which is very few compared with the usual output of an American distillery.
Tasting notes from Thomas
The nose exudes power and density. Soaring juniper is offset by citrus zest (lemon, Seville orange) and exotic fruit (mango, persimmon). Gradually, citrus adds a slightly suave freshness. A delicate peppery note, a touch of ginger, anise and dill, and angelica also develop. While this is a rather greedy entry, the complexity is not at half-mast.
The palate is dense but also very silky. Explosive juniper and citrus fruits (mandarin, Seville oranges, lemon) add a slight sweetness and freshness. Mango and Sichuan pepper follow. Spices such as cardamom and the light herbaceousness of coriander combine confidently. A slight impression of iodine seems to emerge from this profile.
The finish is rather long, with a fruity return (mango fat, citrus). Kumquat then takes the lead, while spices (Sichuan pepper, ginger, caraway) become warmer. The most persistent aromas are spices and vegetation (juniper, angelica, coriander).
