Yoann's tasting notes
On the nose , the cane seduces by revealing its roundest assets. We feel a soft vegetal side, with the tender fiber of the cane which contains the sweet juice. The whole is balanced by rather acidic but perfumed citrus fruits, and also by a floral side. Pepper and sweet spices blend into the whole.
Aeration highlights a woody side that enriches the experience. The spices rise in power, with a fresh and spicy peppermint. These notes balance with the sweetness of the cane.
The attack on the palate is round. We can say that it is very tasty, especially since the pepper enhances the flavors. The notes of sweet bagasse caress the taste buds, and we wonder where the 50° are. The rum then enters a more penetrating phase, with a fatty, rich and tropical earth. The bitterness of the lime finally gives precision and finesse.
The finish is more typical of a white agricultural rum, with notes of bitter citrus, pepper and a trace of fermentation.
