This limited Winch edition comes from one of Guadeloupe's youngest distilleries: the Carrère distillery, based in Basse-Terre. This rum is distinguished not only by its distinctive, elaborately styled bottle, but also by the way it is made.
Indeed, Montebello has the particularity of working with many different varieties of cane from small producers in the surrounding area, and in particular green cane, a species in danger of extinction in the West Indies. This is a plot-based, single-variety selection (from a specific plot where only one type of cane is grown) of a sugar cane native to Puerto Rico, very rich in fiber. Fermentation takes just over 24 hours, followed by distillation on a traditional copper column. The rum is then slowly stirred and reduced to 50%.
Particular attention has been paid to this high-flying agricultural rum, which also makes an excellent white rum for cocktails or Ti'punch.
Nico's tasting notes
The nose opens with a fresh, herbal, lemony profile. A little peppery rain then begins to fall on the liquid, and each drop expresses a little more of a sweet, candied sugar cane, which ripens under our nose as it evolves towards fruit.
Aeration removes all superfluous elements and leads us to the natural, herbaceous, sweet cane juice that flows from the still. We are then transported directly to a distillery in the early hours of the morning.
On the palate, the rum is round and slowly releases its ripe cane flavors. The slight bitterness of the bark combines with lime aromas, for a slightly drier profile in the mid-palate. This is confirmed by a spicier, floral note, where the rum becomes lighter and more airy.
The finish is gently spicy, with green cane that melts into peppery flavors.
