Neisson Clos Godinot is Grégory Vernant's first plot-based rum.
Clos Godinot is a sugarcane plantation in Le Carbet. It culminates at an altitude of 245 meters, and is very steep (around 35 degrees). It benefits from plenty of sunshine and fluctuating temperatures, enabling us to harvest cane with a very high sugar content (brix). Brix is 27, while the average for Martinique is around 18.
Distillation takes place in the legendary Savalle column, after the fresh cane juice has fermented for 4 to 5 days. This is a long fermentation for an agricultural rum, as this is the limit allowed by the AOC Martinique.
Nico's tasting notes
The nose shows a sweetness that we already imagine in the mouth, and which is detailed in generous flowers, black berries, fine pepper. The sugar cane juice is there, natural, without embellishment, simply lifted by a little minty air.
Aeration invites the lime (and especially its zest) to join in. It is enriched with fine cane bark, but also other citrus fruits, such as lemon or grapefruit, which are expressed more through their juice.
The palate is round but of course retains the momentum and liveliness that one has the right to expect from an AOC Martinique white rum. The cane is thick, its flesh is garnished with red and black fruits, pepper, and its bark is candied in its own juice.
In the finish , the rum gives off a warm (but above all not burning), generous, unifying character, all of this done in remarkable simplicity.
