Produced by the Dominican Republic company Oliver y Oliver, Opthimus 25 ans finition Porto is column-distilled from sugar-rich molasses, then aged in bourbon casks for 25 years using the solera method. The rum is then transferred to barrels that have previously contained Port for a few more months of aging.
Nico's tasting notes
On the nose, woody, roasted aromas clearly dominate. The wood seems to have a fairly pronounced, astringent grain, and the cask toasting has been thorough. Notes of coffee, toast, molasses, toasted pecans and well-cooked caramel emerge on the nose. With aeration, the emphasis shifts to the pecans, which carry the day.
Round and well-balanced on the palate, it nicely coats the roasted wood notes. The mid-palate is nicely oxidized, with a hint of kernel and walnut. The rest is gently woody, with a touch of resin, bordering on pastry aromas.
The finish continues this gourmand theme, with the wood borrowing aromas of coconut milk and vanilla.
