The “Des Champs d'Exploration” collection by Payet & Rivière consists of a pure cane juice rum and a traditional syrup rum.
This is the “Sur nos pistes” white agricultural rum vintage.
The pure cane juice is extracted directly from the estate's mill and comes from the R579 sugarcane variety.
From growing the cane to distillation in a pot still, including crushing and then fermenting the syrup for 7 days, the entire process is carried out by Payet & Rivière.
