This Côte-rôtie Cask Finish is a Panamanian molasses rum, produced by the Alcoholes Del Istmo distillery. It is part of Plantation's Single Casks collection, which features unique finishes available in limited quantities.

The molasses was fermented over 3 days before the juice was distilled in a column still in 2007.

After 11 years' ageing on site in bourbon casks, it was repatriated to France to spend a further 2 years in Ferrand Cognac casks at Château de Bonbonnet. Finally, the rum was aged for 10 months in a barrel containing Syrah wine from the Côte-Rotie AOC vineyard.

This single cask delivered a total of 189 bottles worldwide.

Nico's tasting notes

The nose is soft and fruity, like thick, sweet pineapple juice. The wood and spices add a little kick and balance to this sweetness. The toasted surface of the oak and its tannins add texture and contrast.

With aeration, more of the original cask comes through, with vanilla, soft, mellow oak and coconut. There's also some lightly toasted, caramelized praline-like nuts, followed by the return of tropical fruits. The circle is complete.

The palate is more balanced than ever, with a slightly sweet approach and a fruitiness reminiscent of cane juice. The wood tannins develop a certain vegetal freshness on the mid-palate. This soon gives way to ripe exotic fruit, before the soft spices of American oak delicately coat the whole.

The finish is a little more roasted, caramelized and gently vanilla-like in length.
