Plantation's Chardonnay Cask Finish is a molasses rum from Trinidad, an island in the southeastern West Indies.
After a 3-day fermentation, it was distilled by Trinidad Distillers Limited using a 4-column still.
This 2008 vintage rum was aged for 11 years in bourbon casks in the island's tropical climate, followed by 1 year in Cognac casks from Maison Ferrand at Château de Bonbonnet in France. It was then transferred to a Chardonnay (Chablis) wine barrel for a further 1 year.
This Plantation rum is a limited edition from the Single Casks series. Each bottle is numbered.
Nico's tasting notes
On the nose, the first impression is of a fairly light, fruity, floral rum, expressed through a hint of copper. One thinks of rather sweet fruit, despite a certain paleness, like fruit in syrup. The latter then quickly take flight, and just as quickly gain in fullness.
With aeration, the fruit doesn't weaken, even countering itself with a soft, honeyed, slightly toasted woodiness. The oak tannins become more prominent with age, creating an interesting relief of apple nuances.
On the palate, two woody flavors seem to clash and conquer our palate. On the one hand, a typically mildly spicy American oak, with vanilla, coconut and blond tobacco, and on the other, a slightly more tannic, fresh and vegetal attack. Naturally, the two woods balance each other out, and the roundness prevails on the mid-palate.
The finish is gently spicy, round and roasted, with hints of sweet fruit jams.
