La Palma Ron y Miel is a rum produced by the Quevedo family, at the head of the Aldea distillery located in the Canary Islands.
They have been producing a rum made from pure sugar cane juice for 80 years in a still heated over a wood fire.
For the 50th edition of the bottler Tres Hombres, it is a rum mixed with 5% local honey. It aged for 6 months in American oak ex-bourbon barrels.
Who says Tres Hombres, necessarily says fair transport. Once transferred to an old Armagnac barrel, the rum benefited from dynamic aging. During the Atlantic crossing, the swell rocks the barrels in the holds of the sailboat.
